Precise Description of Italian Cooking Principles. Excellent
Working backward from Marcella Hazan's latest work, this book `Marcella's Italian Kitchen' is the third of Ms. Hazan's books I will be reviewing. Following Ms. Hazan's advice early in this book to pay very close attention to words and exactly what they say, I adduce (and confirm by a reading of many prefaces to the various recipes) that this book is less about traditional Italian recipes than it ...

Marcella Hazan's best: the one I reach for first.
I have always considered myself an Italian cook, although myrange is considerably broader, but this book changed my whole out lookto Italian cookery. I have collected most of Marcella's books, including the latest, but this is the one I reach for first. The section on Italian style grilled vegetables has become a summer favorite and has literally changed the way I plan a vegetable garden. It ...

Some mistakes so.
I made the puree of fava beans with rapini. The recipe said simmer 1 lb rapini in 4c water. I think she meant 4 quarts. Same night, lamb shanks with savoy cabbage. "Cook the shanks about one hour or until meat falling off bones" and "serve immediately". (paraphrasing). The braising took over two hours, and tasted better the next day. When I make it again (and I will), I'll cook it a day ...

Must Have!
If you like pasta this book is a must have. I am Italian, and learned to cook because I appreciate good food, and I like to eat! Eating is essential to life, why not eat the best foods, you only live once! I learned from watching my mother and grandmother cook and I can tell you the recipes in this book are the real thing; after all my mother bought this book for me. In my opinion(and my ...

I found a new favorite!
I"m so glad I ordered this cookbook. The recipes are easy and the ingredients (except for a couple of things) are available in the local supermarket. Being of Italian descent myself, I was looking for something different than the usual that was simple & quick to prepare. I found it in this cookbook and every one of recipes that I tried was delicious. The Meat Pie "Pizza Style" is a huge hit in ...

Best Italian cookbook, possibly best cookbook ever.
The only cookbook that I remember the name of the author. Once you make bluefish and potatoes or pork chops with capers and anchovies you will remember her name too. (Actually I think the pork chop was supposed to be veal but we substituted. Her recipes are easily manipulated.) Her husband liked broccoli stems so she found a way to make them. Cut up like matchsticks I have never thrown those ...

The food publishing event of the season: Beloved teacher and bestselling cookbook author Marcella Hazan tells how a young girl raised in Emilia-Romagna became America's godmother of Italian cooking.Widely credited with introducing proper Italian food to the English-speaking world, Marcella Hazan is as authentic as they come. Raised in Cesenatico, a quiet fishing town on the northern Adriatic Sea, she'd eventually have her own cooking schools in ...

An essential book for a beginning chef...
...I've referred to this book over the years for technique and authenticity of Italian cooking...it is a wonderful book. I agree that it is on par with Julia Child's French cookbook. I've made many of the recipes and they are fabulous....the poached shrimp, easy and delicious...the grilled shrimp with flavored breadcrumbs is another favorite, the Lemon, garlic & parsley chicken cutlets is ...
