Great! But pay attention to the "Appliances & Products" Section

This is a great little cookbook... I was originally drawn in by the delicious looking cookies on the cover, and a burgeoning understanding of how good for our bodies coconut is. The balanced approach the author takes is nice; it's fun and many of the recipes are simple - although some are more complicated. I have a very healthy kitchen, and I try to start into any cookbook using only things I already have in my kitchen. (For me, a cookbook is too complicated if I have to run to the store to buy obscure ingredients just to make a recipe from the book!) This book is full of yummy treats, and although I couldn't make the cookies on the cover until I bought a dehydrator (which I recently did for other reasons; and the cookies turned out well!), it was well worth it. I was also quite pleased to see that a lot of the recipes don't include coconut at all...it made the book even more useful for me. Definitely glad I purchased it; even though I originally balked at the price. I'll be coming back to this one again and again.

LOVE this gluten free casein free cookbook!

I LOVE Kelly's Spunky Coconut cookbook. The waffle recipe has been a family favorite along with the "blondies." Kelly's photography is beautiful and I really love the intro to the cookbook as well which explains the ingredients she uses in detail, along with how she's able to "green" her kitchen. I love Kelly's philosophy of simple, yet delicious gluten free foods. Thanks to Kelly and others like her, being gluten free today is so much easier than it used to be! Her recipes are so creative and beautiful! My husband and I both have enjoyed everything we've tried so far from Kelly's cookbook. A few more things I'd love to try: coconut chocolate chip cake, spinach & artichoke dip (dairy free!), chocolate pie, pumpkin cheesecake, penne with garlic cream sauce!! I'm SO excited about these recipes that are not only gluten free, but they are beautifully dairy free & sugar free as well! The book is a bit pricey, but please keep in mind that the costs are due to the book being self-published & it's printed on demand. I am thrilled to know that I could support a wonderful gluten free cook & blogger by purchasing Kelly's cookbook! If you love using lower glycemic flours like coconut flour & almond flour, buy this book! You'll love it!! Thanks Kelly!

Love It!!

I just love Kellys Recipes! I have made her nut milks, quiche, smoothies, some of her cookies and I'm hoping to make a few more things of hers! Her book is the first one I go to when I'm looking for something gluten free, sugar free, and dairy free! It truly is amazing and I appreciate all her hard work! Thank you Kelly for creating this for others to use!!

The best!

I have tried A LOT of recipes using alternatives to refined sugar, wheat and dairy, but nothing compares to the ones in this book! Kelly has done an amazing job at perfecting her recipes, and I have never been happier making substitutions. In fact, everything tastes so good, I probably would never go back to making the traditional versions just because Kelly's versions are so much better. Kelly's banana bread is the best I've ever had, and I love that I don't have to ever feel guilty for eating it!

Good Recipes so Far but a few irritating things.

The Cherry Banana Muffins were wonderful. I used a large muffin pan for one batch and a mini one for another and both were a hit. The Blondies were also very good (but double the recipe). I always substitute Bob's Red Mill GF All-purpose flour for rice flour as I don't like the graininess of rice flour. Looking forward to trying more recipes!

NOTES AS TO WHY I GAVE IT ONLY THREE STARS:
1.) Liquid Stevia: The author suggests using flavored liquid Stevia (English Toffee, Vanilla Creme, Chocolate Raspberry, etc) which are very expensive and hard to find and she doesn't offer any alternatives. So, if the recipe calls for 10 drops of liquid vanilla creme Stevia, and I don't have that and/or won't pay for it, what else can I use? I would have appreciated a note here about substitutes. I ended up using a pack of powdered Stevia and a tsp of vanilla and it tasted great. The ingredients for GF, CF recipes are more expensive to begin with, so why add unnecessarily to the cost?

2.) Eggs. Some of the recipes are really heavy on the eggs. For the Chocolate Raspberry cake, the author writes how surprising it is that this recipe has so little flour...DUH, it has 6 eggs! It sounds basically like a chocolate omelet with agave syrup and 3/4 cups of various flours. (I'm sure it is yummy, but come on!) This is not the only one with 6 eggs. Odd, though, that the quiche and souffle recipes only call for 3 eggs. I'm sure it is all delicious, but we have some egg issues here so I wish it would have been mentioned somewhere or offered a substitute.

3.) Price: This cookbook is very expensive compared to the other GF, CF, Low Sugar cookbooks out there.

4.) Ghee: Although, there is no claim on the cover of being dairy free, thankfully, most of the recipes are dairy free with the exception of a few that call for Ghee, which is a clarified butter, apparently casein free, but not diary free.
