I got this for my husband as part of his "
grill
ing Father's Day gift". It's a great book with a lot of different ways to dress up basic grill food-but easily. You don't have to be a chef to follow these recipes, but you do need a good visit to the grocery store. If you are planning a
more
sophisitcated cook out, this will be a great book for you. I like
Flay
's approach which understands that not everyone is a pro like him, but finds a balance between the chef and every day griller.

One of the best and most relaible cook books in my collection
I will admit to some reservations about
Bobby
Flay
, the highly successful restaurateur and TV chef. He's rich, accomplished and seems unbearably smug but some of his recipes sounded good on TV and so I bought this. And having experimented with it, I forgive him, or at least will accept his `smugness' is well earned. This stuff is good!
I now have several of Flay's books but this was my first and favorite. Indeed in my collection of cook books this is one of my all time favorites. I've tried many, many Flay recipes and almost all of the ones here and have never, I mean NEVER had one fail.
Flay does have some themes he doesn't wander far from; meat with fruit, fish with herbs etc but the variations are wonderful and once you have a feel for where he's going with a dish, you can play around with them. In fact this book is so well used it is hard to find a page that isn't either stained by splashes or my notes in the margin. In my kitchen that means a well loved and well used book.
The recipes are so well balance that if you are confident it will encourage you to try experimenting. In my house a shrimp dish has been adapted to a favorite chicken dish and a
grill
ed turkey breast, now glazed with honey instead of molasses is a main part of the Xmas dinner. Lastly this also becomes an invaluable guide for dealing with meat of any sort if you find yourself scrambling to come up with something at the spur of the moment-yes I'm talking from experience here.
Overall this is a great cook book. I've read a lot and this is one of the most reliable I've ever opened. If you enjoy cooking and especially grilling, you will have to go a long way before you find one as good as this one.

Not Bobby's Best Work

fan, and particularly love Mesa
Grill
in NYC. I also have several of his cookbooks and they are amongst my favorite cookbooks. I have been quite disappointed to date with the recipes in this book.
I made the Spicy Cucumber Pickles and Roasted Tomato Ketchup. The pickles were a vinegary mess, and the ketchup was way too sweet. I dumped both dishes, something I rarely do. The Hamburgers with Double Cheddar Cheese, Grilled Vidalia Onions and Horseradish Mustard was tasty, but do we really need a recipe to create a simple burger with onions and cheese?
The Paella was decent but not memorable. Ditto for the Key Lime Pudding Cake and the Watermelon, Grilled Peach and Blackberry Slad with Honey Yogurt Dressing, which was actually quite mediocre. I did enjoy the Lemon Blueberry Upside Down Cake.
I am such a Flay fan that I am not giving up on the book, although I would at this juncture if it were any other cookbook author. I am trying the chicken quesadillas tomorrow for friends...so far the Mesa barbecue sauce that is a component of that recipe is fantastic, although the recipe yield was supposed to be 3 cups and it was barely two cups. That's just poor editing.
Unfortunately many of the celebrity chefs are under pressure to crank out
more
and more books, and sometimes they do so without really testing the recipes adequately.
I am still hopeful to find a few gems in this book, but I expected a lot more from Flay.
