Non-stick tart tin

This is a good quality tart tin perfect for makng taditional French tarts such lemon tarts, fruit tarts and frangipane tarts
Do not be put off by the strange size (10.25") This is due to the fact that all the European tart tins are in metric sizes and odd sizes result from converting these to the colonial measures we still insist on using.
Any recipe calling for a 10" tart tin will work well with this. My pastry browned nicely in this tin and it was easy to get the tart out of the tin intact and in good shape after it had cooled down.

After watching the Good Eats episode on apple pie, I searched all over town for that "black high sided fluted pan with the removable bottom" that Alton Brown used on the show. From Macy's to Sur La Table, William Sonoma to a few restaurant supply stores, nobody seemed to know what I was talking about. I finally came upon this pan in Amazon and ordered it. This is it folks! It's the perfect size for his recipe and is both handsome and sturdy - a nice heavy weight. Also the removable bottom works wonderfully using his technique of setting it on a drinking glass to release the sides. So, if you, too, saw Alton bake that gorgeous (and tall) pie and desperately searched for the pan he used, look no further...this is it. Excellent commercial-grade baking pan!

Great

Performed just as advertised. Should have instructions for removing ring while hot. The first time I used it I burned my wrist and the quiche landed on the floor. It does turn out the best looking and tasting quiche I have ever made and it is truly stick-free. The trick to un-molding when hot is to sit it on an over turned bowl small enough to fit inside the ring and tall enough so as to be able to get your gloved fingers under the bottom. I use our blender jar.
