A No-Brainer way to Ravioli

This is probably the easiest way to literally make as many ravioli as possible, only limited to as much pasta dough and filling you have, at an assembly-line pace.

The very first time I used it I made 12 dozen ravioli in less that 30 minutes.

The only caveat is to either sufficiently flour or spray oil onto the metal component.

I highly recommend this to any and all.

The press is great but......

Maybe I'm a bit slow sometimes - I'm usually pretty quick to catch on to how things work but I have to admit this had me puzzled. It took watching a video on youtube to realize where I was goofing up.

The press is AWESOME to use once you figure it out. The tan press with the "tubs"? You use that AFTER you've laid your rolled pasta on the metal piece. It's really obvious how it works but for some reason my brain couldn't make the instructions computer. Anyway, when you use it, make sure you dust the metal part with flour or the raviolis will tend to stick and also make sure your pasta sheets aren't tight on top of the press - give yourself a bit of extra or when you press the dough, it'll tear.

Also I use a pizza roller like this one Norpro Deluxe Pastry & Pizza Roller that works really good, especially on the center horizontal and vertical cuts. A regular rolling pin works ok for the outside cuts but not as well on the inside.

Plus, I've gotta figure out a way to keep the press from sliding all over the table when I'm trying to roll it out. Maybe some of those rubber "feet" things. It makes it difficult to make good raviolis when you're chasing the press all over the place.

Don't make ravioli without it!

This takes all the guesswork out of making raviolis - I wouldn't dare make filled pasta without it. Simply make your pasta, place it on the metal grid, then gently nudge indentations into the dough with the plastic press, fill, cover with dough and then roll with a rolling pin to seal it shut. I've never had issues with my raviolis sticking to the mold - usually a gentle tap with the finger and they fall right out - but maybe my dough is drier than most peoples' dough? I also don't bother sealing with egg wash and haven't had any issues. That being said, other reviewers have suggested using either flour or cooking spray to aid in the release of the pasta and using an egg wash to help seal the dough. That should do the trick!

A useful gadget

The Norpro ravioli maker is easy to use, and I love it because it's a non-electric gadget that works well, if you know how to use it properly. I found that it's important to lightly flour the surface of it before each pasta cutting, and it may be necessary to use a sharp knife to completely sever the edges between raviolis. Ravioli is much easier to make than you might think, especially with this handy tool.
